For non-gamers, definitely the apprentice mode. If they have extensive experience in games like Magic, then you might be able to start full mode.In terms of playtime, I've found it's right around 2 hours. I know that sounds long, but it takes them time, especially the first several turns, to pick their cards and make their moves.
In comparison to the full game, it's pretty close, although you aren't playing with your mage's special abilities and for the most part, no constructs.
I'd also submit that the Wizard tends to feel a little overpowered in apprentice mode when he gets the gorgon archer and basilisk out. With decent rolls, he can cripple and poison everything that tries to bother him. I'd steer away from him with new players.
